I would say the remake on the original Resident Evil (aka REmake) is the best one. It gives you the same experience of the original game with better graphics, plus I like the added Lisa Trevor stuff. I get the complaint that it still has the "tank" controls and it keeps the fixed camera...
I would like if IO Interactive remade the original three Hitman games to play as their newer Hitman trilogy. It probably wouldn't be necessary to remake Blood Money, but I wouldn't mind that either.
