If you bring the underhook arm across, it will drive the elbow up (so if you're cross facing with the left arm, the right hand heads to the left elbow), then use your chin to lock it in place.

There are multiple ways to break someone from an inside heel hook.
The 2nd vid you posted of the side bridge into the knee - that's more from his outside sankaku or 80/20 position.
If you don't have that position you can still finish the heelhook through rotation.
