Heavy farmers walk, deadlifts and their variations, rack pulls, shrugs, hang clean, all kinds of rowing.

My traps picked up a decent amount of growth once I started the olympic lifts.
 
Remember those old school pec dek machines with the elbow at a 90 degree angle? If you can find one that has a 180 degree arc and do it backwards it is insanely good for the traps. You can also improvise the movement with bands.
 
High rep banded face pulls. Bet you guys didnt know about that one did ya?
 
everybody says i got huge shoulders, but i dont train shoulders ,only traps haahaa. Dumbell shrugs 4 sets with shoulder or Back day. 2 times a week!! Not those lifts at speed but you have to hold them 2 seconds up near your ear with 50/70 pounds dumbells. between 12 and 20 reps
