Best way to lose fat and keep as much muscle as possible?

There are a bunch of 5/3/1 variations if you want more volume, more intensity, more assitance etc. Check the S&P FAQ, which has a link to a beginner/intermediate routines thread. It's a bit out of date so there are probably even more variations now (I don't think it includes Joker sets which a lot of people love)

For weight loss, low-carb, high-fat is great. Keep lifting to maintain strength. Heck you can probably get stronger if you don't restrict your calories too much.
