Obviously, mental stability, character, and mental agility dictate the late stages of the game and who actually makes it to the final end.

What is sufficient on the physical side?
 
If you can sprint 400m repeatedly you should be good.
 
Being able to keep going regardless of the physical consequences and pain
 
Someone from my girlfriend's gym was on the most recent UK series..he was the second person to drop out, he had about 30 seconds TV time.
 
What about the mental consequences?

For something like a reality tv show, very low.
However that is not what was being asked.

You cannot really judge a person on how they will react until you put them in a similar/very similar situation. That is why they put people through interrogation training prior to deployment regardless of the theatre of operation.
Obviously for SAS it will be more full on and will be aimed at weeding people out at the selection stage. For the above scenario I gave, they will build on the mental fortitude that they have passed selection with and provide them with a relevant set of tools to aid in their interrogation.
