I've never played any Diablo games and I recently seen a stream of Diablo 3, which looks pretty fun. Should I go back and play or watch any let's plays of the first two before playing Diablo 3?

Personally I would try Path of Exile, which is free and more of a D2 style game, but unforgiving as far as character creation. A new "league" should be starting soon, which is a gimmick where people start new characters for a few months. To be honest though, if you've never played a Diablo game D3 might be a good place to start. You could probably play through D1 and D2's storylines in a couple days though.
