I refrigerate Frank’s, Huy Fong Sriracha and Valentina but not Cholula. It’s totally arbitrary why I refrigerate three of them but not the other. Doesn’t make sense but there you have it I guess.
I typically do, but I make my own hot sauce from the peppers that I grow. I'm not checking pH and use white wine vinegar which isn't as acidic as others. Just playing it safe.
If its some store bought hot sauce you're likely fine. It's good to wipe the cap clean after use however.
