So here is the most profitable fighter by year for the UFC. I added how many pay per views were sold each year and attributed them to the two involved in the main event. Of course, this may not reflect the biggest star that year as some fighters fight more often than others and sometimes the undercard sold the card more than the main event. So it's not perfect, but interesting nonetheless. I had to stop in 2001 as no buy rate information is available as far as I can find.

2017- Conor McGregor (4,400,000) (if you don't include May/Mac then it's Daniel Cormier at 1,160,000)
2016- Conor McGregor (4,267,000)
2015- Ronda Rousey (2,600,000)
2014- Johny Hendricks/Robbie Lawler (700,000)
2013- Georges St-Pierre (1,580,000)
2012- Junior Dos Santos/Jon Jones (1,150,000)
2011- Jon Jones (1,490,000)
2010- Brock Lesnar (1,960,000)
2009- BJ Penn (2,390,000)
2008- Forrest Griffin (1,540,000)
2007- Chuck Liddell (1,150,000)
2006- Chuck Liddell (1,950,000)
2005- Chuck Liddell (420,000)
2004- Randy Couture/Vitor Belfort (160,000)
2003- Randy Couture (143,000)
2002- Tito Ortiz/Ken Shamrock/Randy Couture (100,000)
2001- Tito Ortiz (75,000)

stop it both of you lol
Sherdoggers don't seem to have a thing for upcomers just like they didnt have it for Ngannou
Our prospect will prove you guys wrong
2018 will be his year

In 2018 I have my money on one of:
Max Holloway
Volkan Oezdemir
or maybe Francis Ngannou

It be nice if the Dollar figures were next to the names, to see by how much the income varies for the top earners over the years.

2018 - GSP. No question about it.

Tim Sylvia is coming back, y'all. Mark my words.

2018 is gonna be the year of The Timmy!

Nothin' but boats and ho's and moneybags for Timmy next year.

I know GSP/Alves was comain on UFC 100, but given that he was that built in Canadian fanbase, I'd argue GSP probably takes 2009 over BJ.
