Does anyone know of any wrestlers that do or used to go off script a lot and were genuinely a bit crazy and didnt give a shit. This could be for any company out there, also any footage of this in action would be appreciated.

There's the infamous SummerSlam 2005 match between Shawn Michaels and Hogan. Shawn didn't necessarily "go off script", but he intentionally tanked the match.

He oversold Hogan's moves to a farcical level, because Hogan basically fucked Michaels over. Including a big boot sell that involved Michaels taking the bump, getting back up, spinning around, and flopping to the floor.
