no top game? wtf are you talking about? there are guard players and top players, not everyone is the same.

That depends: is it real carne asada or the fake generic skirt steak that people (using that term loosely) try to pass off as "carne asada"?

Either way you're missing out. I LOVE me some carne asada, but a good churrasco is also a thing of beauty.

We use sirloin, diezmillo (chuck steak) or palomilla (top sirloin).

Here in Sonora they are cooked with only salt and pepper in mezquite charcoal, fluor tortillas, guacamole and salsa are core.

Also isnt skirt steak arrachera? that shit is delicious when properly prepared.

Ahh, that's the good stuff! Unfortunately once you get out of Mexico or the Southwest US you find a lot of places that have the nerve to serve up a gristly cut of skirt with no seasoning or flavor and call it "carne asada", figuring that most people don't know the difference. These are the same places that give you green sour cream and try to pass it off as guacamole, or tomato paste in water with a couple sad looking pieces of onion and call it "salsa". God I miss real Mexican food.

Sure, leg drags from everywhere aren't common in modern bjj

Top game has more evolved than guard play
