The way things are is that Paige is more popular than anyone else on the card, regardless of merit. She can make more money on social media than her current UFC contract. That is why she is angling for more pay. She is right.

CM Punk, that's 2 fights in the UFC. How about the 98% of the fights in the UFC that has nothing to do with CM Punk - type of fights? The vast majority of the time there are no "spectacle" element in UFC fights in a sense you used the word, which means your argument is flawed. The small 1-2% of the fights you are talking about doesn't define UFC, the rest 98-99% does.
